How to Can Tomatoes, Tomato Sauce and Salsa

This weather has been so whacky! It’s mid October and usually on the Northeast Coast it means sending kids to school in light jackets. My son is still going to school in shorts. It’s so warm my grape hyacinth are coming up and I’m still harvesting tomatoes and peppers. I have lots of tomatoes! Mostly I’ve been making sauce and salsa. I haven’t been bold enough to start canning, mostly I’m putting my sauce in freezer bags and storing them that way.

My local orchard offers many different free programs and lessons, among them a canning lesson. I keep telling myself I have to get there and learn to can. Until I do though, maybe this can help. A video how-to canning lesson.

    That’s funny because you seem like a canner to me. I’m also not brave enough to try. I freeze or make food items and freeze them to save excess veggies but canning freaks me out. There’s so much to it. I would like to learn though because my grandma canned and her stuff was great. It just seemed like such a production.

    No kidding about the weather! I’m on the RI border of CT and tomorrow will be around 80!
    Definately learn to can! Once you have your system and timing down you could can every day and not have it be a big production. There is nothing like opening a jar of tomatoes in the winter and having it over some homemade pasta (also not so scary).
