Don’t Waste It Smoothies
We always seem to have bits and pieces of produce left over. Since we hate to be wasteful, we’ve started making don’t waste it smoothies. The grossest combinations can taste good, as long as one type of produce doesn’t overpower the rest. Today, we had grapes, a peach, a nectarine, a small tomato, a carrot, applesauce, blueberries and about 1/4 cup of iced tea that were starting to go to waste. I also added a few pieces of spinach and two ice cubes. We blended it up, added low fat whipped cream and enjoyed getting a serving of fruit and a serving of veggies all in one drink.

We love to use our bits of pieces of veggies in Couscous. Anything is good in couscous. And I use fruit in muffins quite a bit.

I like to freeze my own fruit for smoothies. I can never make it through a whole flat of strawberries, blueberries, or any other fruit before they go bad. So i bought a tall, slender snap top cereal container. After washing and chopping into smaller pieces, I spread the fruit on a cookie sheet, flash freeze it so it won’t stick together when combined into the snap-it container. I make smoothies every day with it! I usually put 3 servings of fruit (a banana, orange and 1/2-1 c frozen fruit), 2T soy protein powder, 1 tsp of splenda, 3/4 c water and a handful of ice cubes for a generous protein and high fiber smoothie that gets me through the afternoon.

Great tips. My brother makes an incredible veggie stir fry and tosses in kidney beans instead of meat.

What a great tip. Those big containers of fruit frozen together are hard to deal with. I’m going to try flash freezing with my raspberries.

I make smoothies all the time for my kids. I love having extra left over because I freeze it into popsicles with molds that I have. Perfect!
