20 Things to Do with Leftover Turkey
If you’re like many Americans, you’re trying to find some creative uses for that half eaten turkey carcass in your fridge. As always, I’m here to help. Behold:
20 Uses for Leftover Turkey
- Cold Turkey Sandwiches - I ask you, is there anything better for Black Friday eating than a cold turkey on a roll with a bit of mayo, salt and pepper?
- Turkey Soup - Take that turkey carcass and all the bits of meat clinging and slow cook it for several hours with some onions, carrots and celery to make a great stock. Remove the bones and compost and add turkey meat, carrots, parsnips, celery, corn, or rice to make a delicious and hearty soup.
- Turkey Congee - My mother in law likes to make this rice gruel with her leftover turkey bones and meat scraps. It might not sound like much, but it’s actually quite good.
- Turkey Salad - Shred turkey add chopped hardboiled egg, chopped celery and onion. Toss with a bit of mayo and season with salt and pepper. Makes a great sandwich or cracker topper.
- Freeze for later use - Who says you have to eat your leftovers right away? Put them in freezer bags and stow until you’re ready to eat again.
- Turkey Casserole - Toss some egg noodles with turkey and gravy. Good stuff.
- Turkey Tetrazinni - Turkey and pasta? Could work.
- Turkey Quesadillas - Spray frying pan with cooking spray and place one tortilla on the bottom, add turkey, jalapenos, cheddar and jack cheese and top with another tortilla. Cook on low for a couple of minutes and flip and cook for another couple of minutes until turkey is cooked and cheese is melted. Cut into fourths and serve.
- Turkey Tacos - Shred turkey and heat up in a little olive oil. Use in taco as you’d normally use beef or chicken.
- Turkey Pot Pie - Comfort food at it’s finest!
- Turkey and Stuffing Casserole - Take leftover turkey and mix with leftover stuffing. Mix with a creamed soup such as cream of mushroom or cream of chicken and some frozen peas and place in a casserole dish. Top with french friend onions. Cook at 250 to 375 until heated through and crust on top.
- Turkey Enchiladas - Shred turkey, toss with chedder and jack cheeses and chopped olives.Wrap in a warm enchilada shell and top with enchilada sauce.
- Turkey A la King - Ok, I don’t have the guts to try this, but you can be the brave one.
- Turkey, Broccoli and Cheese Bake - In a large bowl mix a two cans cream of mushroom soup, a cup of turkey, two boxes of cooked frozen broccoli, an egg, half a chopped onion, a tablespoon of mayonaise and some some salt and pepper. Pour the mixture into a casserole dish and top with cracker crumbs. Bake at 350 until brown and bubbly.
- Turkey Supreme - A simple turkey and rice dish.
- Turkey Curry - This looks like something I might try. My husband and I both like spicy dishes.
- Turkey Gumbo - Try this nice recipe with artichokes and andouille sausage. Actually this looks really good.
- How about some turkey risotto stuffed tomatoes?
- Turkey Pizza - Make your own pizzas using turkey as a topping.
- Turkey Stir Fry - Stir fry with some onions and peppers and serve over rice.

MMMmmm… Leftover Thanksgiving dinner. What’s better? The actual meal or the leftovers?
All of these look awesome but my favorite has to be #1 with a coupld of dashes of tobasco. I’m going to the kitchen right now.
Maybe we’ll get some gumbo going for tonight.

21. Pet treats for the little doggies and cat! My two Papillons (Maxxie & Sophie) and Zeussie Pussy Cat just luuuuuuv leftover turkey. Heck! They even love store bought oven roasted and thinly sliced Turkey too!

My sister makes turkey curry every year with the leftovers. Her sons look forward to that more then Thanksgiving.
